About Mark Best 

As one of Australia’s most celebrated culinary forces, chef Mark Best's journey commenced with a bang when he clinched the esteemed Josephine Pignolet Award for Sydney's best young chef in 1995. This early triumph spurred him to open Peninsula Bistro in Balmain, swiftly establishing his reputation for culinary excellence. Seeking to refine his craft, Mark embarked on a culinary pilgrimage to acclaimed Michelin-starred establishments in France and the UK, including L'Arpège and Le Manoir Aux Quatre Saisons, where he honed his skills to perfection.

Returning to Australian shores, Mark unveiled his magnum opus, Marque, in 1999, igniting a culinary revolution that would dominate the scene for years to come. Marque swiftly garnered widespread acclaim, earning prestigious titles like Restaurant of the Year from esteemed publications and securing a coveted spot in the San Pellegrino World's 50 Best Restaurants list for three consecutive years.

With a culinary journey steeped in innovation and dedication, Chef Justin James stands as the visionary force behind the exquisite dining experiences at Restaurant Botanic. Under Justin’s leadership, Restaurant Botanic not only earned the prestigious "Restaurant of the Year" title from Gourmet Traveller but also took out Restaurant of the Year in South Australia for three consecutive years, received the coveted three hats from the SMH Good Food Guide, was named a World's 50 Best Discovery, ranked #15 in the world by La Liste,  was featured in the Hottest 20 by The Australian and received a 5 out of 5 score by The Australian, amongst many other notable accolades. 

Since opening the restaurant in 2021, Chef James has been instrumental in crafting a dining experience that intertwines the rich offering of the Adelaide Botanic Gardens with his unique culinary vision, which has been informed by his extensive experience at globally renowned establishments like Eleven Madison Park and Noma.
