A bit about Shun:

Shun was first introduced to wine by his parents at a young age - he would smell their wine glasses at the dinner table and they would discuss quality, how wine elevates food and conviviality. Fast forward to 18 years old, he was fortunate enough to live in Pisa, Italy where he was training in fencing.

His fencing maestro, Antonio Di Ciolo (Italian Olympic Fencing Coach) would host lunches at the local trattoria and would speak deeply about philosophy and metaphors about fencing, life, food and wine…it was a heartfelt, beautiful experience that was the catalyst that imbued his love of wine for life.

Over the years he worked away to cement his love for wine and hospitality; he started as waiter and believed he will always be a waiter at heart, then, he worked his way through restaurants in Switzerland and Japan (Oak Door Tokyo) and eventually landed back in Australia, his home, to work at premium venues - Icebergs Bar and Dining and Nomad Sydney to name a couple.

It all changed when he had the opportunity to work with two incredible professionals at Gowings Bar & Grill, Sydney; Marie Gallien and David Galvin. They took a serious risk and gave him his first breakthrough in wine which eventuated into the role Curator of Wine for QT Sydney further cementing his love for wine and passion for wine knowledge.

He has a big love for his guests and worldwide hospitality team. They are the ones that inspired him to persevere when Covid19 hit. Sharing his passion via technology was new, daunting and exciting at the same time. Who would have thought that the simple pleasures of tasting wine in a restaurant, bar or winery would be taken away from you. Now, he has found a way to bring it back and that is something he feels very lucky about.
