This year’s keynote will be delivered by Dean Lennerth, Executive Chef – South Australia, Australian Venue Co.

With more than 20 years of experience and a leadership role spanning multiple venues, Dean will take us “Beyond the Schnitzel” to explore how pub cuisine is evolving in Australia’s hospitality scene.

With over 200 venues in their portfolio, Australian Venue Co. brings a unique perspective on balancing tradition with innovation – and Dean will share first-hand insights into how his teams are redefining what pub dining means for today’s consumers.

The event kicks off with registration and networking, where you can drop your business cards into a draw for a lucky door prize. FSAA CEO Minnie Constan will set the stage with opening remarks, followed by a gourmet networking lunch.

About the Speaker

Dean Lennerth is an Executive Chef in South Australia for Australian Venue Co., one of the country’s leading hospitality groups. Dean leads a talented team of chefs across multiple venues, fostering creativity, consistency, and excellence in the kitchens he oversees.

A chef for more than 20 years, with over 15 years in senior Head Chef and Area Chef roles across Adelaide, Dean’s career has been defined by a passion for developing people – helping his teams build skills, grow in confidence, and innovate together. His leadership is centred on collaboration, mentorship, and ensuring both his teams and the food they create continue to evolve.
