Her family has been cultivating the land on the Mediterranean island of Cyprus—home to the birthplace of Halloumi—for four generations, with roots tracing back to the 1800s. This rich heritage infuses every piece of cheese she creates.

Rue is dedicated to preserving the time-honoured traditions of cheesemaking, drawing inspiration from classic French, Italian, Greek, Swiss, and English styles, among others.
