Many parties have graced the sun-drenched courtyard in front of Collingwood Yards’ resident radio-station-turned-wine-bar, Hope St Radio. This one might be the cheesiest yet. 

On Sunday November 8, follow DJ Moopie’s genre-agnostic electronic tunes to the arts precinct’s outdoor tables – draped in red-and-white gingham tablecloths for the occasion. Hope St Radio brings its ingredient-driven sensibility to two pizzas, with Northern Rivers favourite Ciao Mate sharing the Gozney oven.

Hope St Radio’s Hawaiian, which is more grown-up than the usual, pairs pepperoni with a tart pineapple reduction, Aleppo pepper and pecorino romano. There’s also a playful take on sour cream and onion potato chips, where an onion soubise (French onion sauce thickened with bechamel) is studded with shaved potatoes, crème fraîche and drizzles of spring onion oil.

From Ciao Mate, a mortadella number with toum (Lebanese garlic paste), charcuterie-infused XO sauce, stracciatella and pecorino. Plus, a pizza slathered with vodka sauce with pesto, whipped ricotta, Parmigiano-Reggiano and fresh basil.
