Seitan is a very versatile gluten-based meat alternative. One of the
challenges with cooking with seitan is the gluten subtaste that often
lingers on. In this class you will learn to eliminate the gluten flavour
and to prepare seitan in a number of ways to suit various culinary
requirements.
