WORKSHOP 3: FERMENTING FUNDAMENTALS
with Tom Scott

Tom Scott is a passionate fermenter, and soil and food systems thinker. His work focuses on bringing people back into relationship with living systems through gardening, composting, and fermentation. He believes in empowering people to grow food, build soil, and regenerate their environments through the microbiomes that connect us all.

Workshop 3 (Prepare) in the Connect to Your Kai series is a deep dive into the world of lacto-fermentation. Fermenting is one of the oldest and simplest methods of preserving food. You'll learn how beneficial microbes transform ingredients into complex, flavourful foods. Ferments extend the shelf life of fresh ingredients, maintain or improve nutrient availability, and are good for your gut too.

Tom will guide participants through the principles and practice of preparing kai through lacto-fermentation, exploring different fermentation styles, techniques, and ingredients. Together, you'll make a seasonal kraut from scratch to learn the key steps for successful fermentation at home.

You will also get to taste test a range of Toms ferments, including kraut and kimchi. Tom will discuss flavour development, nutrient availability, and troubleshooting common fermentation challenges.

Participants will get to take home a jar of finished Kraut. Please bring a clean glass jar (500 - 700ml) with a lid for this purpose.

Tickets include:

  • Theoretical and practical instruction in lacto-fermentation.

  • Access to ingredients, equipment, and tastings.

  • A take-home batch of seasonal sauerkraut.

  • Tastings of kraut, kimchi, pickle, and honey ferments.
