From Vineyard to Table: Zero-Waste Solutions for Hospitality

Australia’s hospitality sector is moving beyond simple food-waste reduction towards a full zero-waste mindset that spans vineyard operations, kitchen processes and guest experiences. Lucan Creamer of No Offence Wines will open the conversation by explaining how his pop-up wine bars and tasting experiences are grounded in circular-economy principles—serving high-quality wine on tap from stainless-steel kegs and reusable glass bottles, dramatically cutting the carbon footprint that single-use glass bottles create. He’ll demonstrate how sourcing from progressive, independent winemakers and eliminating empty-bottle waste helps venues impress guests and spark engagement while keeping resources in play.

From there, we will discuss how restaurants and producers can divert food scraps, surplus ingredients and packaging away from landfill—through strategies such as on-site composting, paperless menu planning and intentional purchasing and more!
