Tickets: $49. Over 75% sold out.
You probably already know Simon Gault as one of New Zealand's most celebrated chefs. What you may not know is his health story - the one about what happened when his own body forced him to completely rethink how he was eating and living.
This September in Queenstown, Simon joins Prof Grant Schofield and Dr Louise Schofield for an evening that goes deep into the future of medicine. Why, in an age of extraordinary technology, are we still so far from living well? It's a candid, science-grounded conversation about what it actually takes to change that.
Choose Your Hard - Book Launch Exclusive
As a special addition to the evening, you'll have the opportunity to take home a personally signed copy of Prof Grant Schofield's brand new book, Choose Your Hard - straight from the very first print run, before it's available anywhere else in the world. Stock is strictly limited and will only be available for pickup on the night. Add it to your ticket while copies remain.
An Evening for People Who Want More
Medicine is changing. The evidence is clear that the most powerful interventions for chronic disease, mental health, and longevity are not pharmaceutical. They're lifestyle, nutrition, and behaviour. Although the health system is still catching up, the tide is turning as clinicians, allied health professionals and the public demand more than managing symptoms of a disease but rather going upstream and fixing the root cause.
What You'll Take Away
What choosing the right 'hard' actually means - and why it could be the most important decision you make for your health and career
Simon Gault's personal health transformation - and the science behind using food as medicine
The real reason most behaviour change fails, and the evidence-based strategies that actually work
What the future of medicine looks like - and where lifestyle, coaching, and behaviour change fit in.
Who Is This For?
This event is for people who are serious about health - their own and others'. You might be:
A health professional - nurse, physio, GP, pharmacist, or similar - who wants to go deeper with behaviour change and preventative care
A high-achiever who's built a successful career but is increasingly drawn toward work that has real purpose and impact
Someone with a deep interest in health and wellbeing - your own health journey may have sparked something you can't ignore
Curious about whether a career in professional health coaching could be right for you
You don't need a medical background. You need genuine curiosity, a desire to help people, and the drive to do the work.

About Prof Grant Schofield
Professor of Public Health | Chief Science Officer, PREKURE Grant Schofield is one of New Zealand's most respected public health voices - and one of its most direct. As Professor of Public Health at Auckland University of Technology and Director of its Human Potential Centre, his life's work is challenging a healthcare system that treats disease after the fact, rather than preventing it. Co-author of four bestselling books and former Chief Scientific Adviser to New Zealand's Ministry of Education, his newest book Choose Your Hard is a provocation: life is hard either way - being unwell is hard, making real changes is hard. The only question is which hard is worth it. In an era of AI, radical change, and the growing limits of conventional medicine, Grant brings a rare combination of scientific rigour and genuine optimism. His talk sets the tone for the evening - and gives the audience a framework for thinking about health, career, and the future that most people leave the room still thinking about.

About Simon Gault
Award-Winning Chef | Food as Medicine Advocate Simon Gault is one of New Zealand’s most recognisable culinary figures. A five-season judge on MasterChef New Zealand, an inductee into the New Zealand Restaurant Association Hall of Fame, and the chef behind some of Auckland’s most celebrated restaurants, he has spent decades shaping the way New Zealand eats. Simon has also explored the science of modern nutrition through television documentaries including Why Are We Fat?and How We Eat, investigating the global rise in obesity and the impact of modern eating habits on our health. Twelve years ago, the subject became deeply personal when Simon was diagnosed with Type 2 diabetes. His doctor warned him he was dangerously close to insulin and dialysis and asked whether he wanted to live long enough to walk his daughter down the aisle. That moment changed everything. Simon went back to the drawing board, challenged what he thought he knew about food, and rebuilt his health from the ground up. He lost 30kg and brought his diabetes under control, going on to develop a science-based health programme focused on nutrition, gut health, sleep, and timed eating. Today Simon brings a rare combination of chef, storyteller, and lived experience to the stage. His talks are practical, engaging, and deeply motivating, showing audiences how small changes to the food we eat and the way we live can dramatically improve long-term health.

About Dr Louise Schofield
Behaviour Change Specialist | Co-Founder & CEO, PREKURE Louise Schofield holds a PhD in behaviour change and is the co-founder and CEO of PREKURE, New Zealand's leading professional health coaching education provider. With more than 15 years building businesses in corporate wellbeing and designing programmes that actually change behaviour, Louise knows that the gap between knowing and doing is where most health interventions collapse. Her approach is evidence-based, practical, and grounded in the science of how people actually change - not how we wish they would. Her talk closes the evening with something rare: a genuine roadmap. Not motivation, but methodology. How to build the confidence, the strategies, and the habits that increase healthspan and happiness - and how behaviour change provides the structure that makes it sustainable.
