Luke will be serving a magnificent range of Ramen bowls, showcasing amazing ingredients from local Shoalhaven Food providers.

Tonkatsu Ramen (pork): Luke has sourced all of pork and poultry from the guys at Vincentia Craft Butchery and Providores. The pork it’s self is from a lovely couple from Picton named John and Kristy. They raise Heritage Wessex Saddlebacks and Landrace pigs. the chefs will  use the pork bones and shoulder in the broth and toppings.
Along with the pork he also uses Real free range chicken from Wilton, the farmers names are Bradley and Jane. The birds are completely free range and pasture raised and allowed to slow grow naturally. This dish is served with  Aji Tomago (ramen eggs): Erica from Vincentia Craft Butchery sources the eggs from John Nixxon. John is a second generation farmer and prides himself on producing genuine free range eggs. The chickens feed is also produced by John down on another farm so he has complete control over what the chickens feed on. They are rich in colour and flavour.

Mottainai Kingfish Shoyu Ramen: Mottainai is Japanese for no waste. They use every part of a kingfish including the scales and bones to create this ramen. The only waste is the gills and stomach of the fish. The Yellowtail Kingfish is hand line caught in Jervis bay by local fisherman. It is ike jime brain spiked to not only humanly dispatch the animal it also yields the most beautiful product.
