Undeclared allergens caused a staggering 48% of all food recalls between 2020 and 2024, according to the latest Food Standards Australia New Zealand (FSANZ) data. Effective allergen management and accurate labelling are more important than ever. This comprehensive 6-hour workshop will guide participants through the core principles of allergen identification and management, and labelling compliance. You’ll gain a clear understanding of PEAL (Plain English Allergen Labelling) requirements, how to identify and manage cross-contamination risks, and when to apply precautionary allergen statements. Whether you're involved in food production, new product development or QA, this session equips you to meet regulatory obligations and protect consumers with confidence.

About your presenter
Mashhuda Carrigan is a food technologist with 9 years of experience in food safety, quality, and primary processing of eggs and high-risk, ready-to-eat products. She holds a Master’s in Food Science and Technology from The University of Queensland. Additionally, she completed a Certificate IV in Training and Assessment. As an Educator at UQ Skills, Mashhuda co-leads training programs in the Applied Sciences department. She is passionate about lifelong learning and creating inclusive, meaningful learning experiences, particularly for students from CALD backgrounds.
This workshop will be presented in collaboration with FaBA, Australia’s Food and Beverage Accelerator.
