Bec Bremner – Founder & Head Baker, Ottimo Bakery
Bec Bremner has been baking sourdough since 2019, when a deep love
for natural fermentation was sparked under the guidance of her mentor,
John Reid, at the iconic RedBeard Bakery in Trentham. Over three
dedicated years, she honed her craft through practice, persistence, and
passion—transforming flour, water, and salt into loaves full of life and
character.
In March 2022, Bec registered her home kitchen and launched Ottimo
Bakery, starting humbly with a single bake day a week, supplying
friends, neighbours, and her local personal training team. The buzz grew
quickly. From monthly market stalls to selling through the warm and
welcoming Just Planet Coffee Roasters in Sunbury from October 2023,
Ottimo found not just a retail space—but a community.
Ottimo Bakery’s commitment to integrity and excellence was nationally
recognised in June 2024 at the National Artisan Baking Competition:
In February 2025, Ottimo took a bold and exciting step
forward—opening its very own shopfront in Sunbury, expanding its
offerings while staying true to its roots: wild-fermented sourdough,
handcrafted with care, no additives, and no shortcuts.
Bec’s story is one of persistence, community, and the simple power of
real bread. Ottimo means “excellent” in Italian—and that’s exactly what
she delivers, one loaf at a time.
