Noble Bootleggers Distilling Co is a fiercely independent distillery and regenerative farm based on Dja Dja Wurrung Country, just outside Bendigo, Victoria. Founded by hospitality veterans Kristin and Dan Lemura, we combine bold flavour with bold sustainability - proving that doing good and drinking well can go hand in hand.
Rooted in circular economy principles, we operate with minimal waste, repurposing every by-product into something meaningful - be it nutrient-rich compost, regenerated soil, or botanicals grown right here on our land. Solar-powered and community-focused, we work closely with local producers, cafes, and restaurants to create a more connected and resilient food and drink culture.
Through our boutique bottle shop, Alcohol By Victoria, and our bartender training program, we champion small Victorian makers and give back to the local hospitality community. Whether it’s through our Australian Amaros, small-batch gins, or collaborations with regional artists, everything we do is driven by integrity, creativity, and purpose.
