Puglia Pasta Classes came into being from Cosimo Mazza’s passion for the traditions and cuisine of his homeland in the Apulia region, Italy. He grew up in Oria, a small medieval town in the Provence of Brindisi, and spent most of his childhood in the kitchen of nonna Francesca and mamma Marisa watching them as they cooked and made the fresh pasta in all the various cuts and shapes.

The passion for Italian cuisine has always been an important part of Cosimo’s life and has accompanied him throughout his 20+ years in the hospitality industry.
