Jamie Illistom is the owner of Wombat Way Honey and a Wollondilly local. He has been a beekeeper for over 8 years and currently runs multiple apiaries across the broader southern highland area with over 150 hives. Feel free to come along, pick his brains and try a sample or 2 of some of the wonderful local blends of honey.
