In this Christmas workshop with Michael, we’ll be making two much-loved sweets from the Portuguese table.

We start with broas castelares, a classic Portuguese Christmas treat made with sweet potato, almonds, coconut and orange and lemon zest. Golden, fragrant and soft inside, they are part of the festive tradition in many families, served at the table or given as homemade gifts.

And to finish, salame de chocolate, a Portuguese classic that needs no baking. It’s made simply with Maria biscuits, chocolate and butter, then rolled into the shape of a salami. It’s a favourite at family gatherings and birthdays and, of course, on the Christmas table.

Food and cooking have always been a big part of my life, and they are closely connected to my Portuguese roots and family background. Some of my earliest memories are of watching my mother prepare and cook meals at home, and I learned a lot from her simply by being in the kitchen and seeing how she did things.

Christmas was a particularly special time for food in our family. The cake making would start as early as November, filling the house with all the familiar sights and smells of Christmas and giving me an early appreciation for the time, care and tradition that goes into cooking and baking.

My love of food eventually led me to train as a chef through Highlands College. I then worked in the hospitality industry for three years before moving into retail, and I have since moved into the health care sector. Although my career has taken me in different directions, food and cooking have remained a constant passion.

While at Highlands, I also completed a micro-teaching course, which gave me the opportunity to teach adult cookery classes. I really enjoyed sharing my knowledge with others and helping people become more confident and creative in the kitchen.

I love travelling, particularly experiencing different foods and discovering how people cook and eat in different parts of the world. I also enjoy reading recipes and then changing them to suit my own tastes or putting my own twist on them. For me, cooking is not just about following a recipe - it is about experimenting, being creative and, most importantly, enjoying good food.
