COOKING CLASS DESCRIPTIONS

Move beyond buying miso—learn how to make and nurture your own.

In this hands-on workshop, you'll prepare approximately 1.5 kg of all-natural miso using only soybeans, rice koji, salt, and water.

You'll also enjoy a rare tasting session featuring three different homemade misos, experiencing how ingredients and aging affect flavor, aroma, and color.

Once you learn the process, you'll gain a lifelong skill that allows you to create endless variations using different beans and fermentation periods.

Drawing from my experiences visiting traditional miso breweries across Japan, I'll also share insights into natural fermentation methods and the unique characteristics of long-aged miso.

Tasting Experience

Explore the unique flavors of handcrafted miso through a guided tasting featuring three different homemade misos. You'll discover how the type of bean and aging process influence each miso's aroma, color, and depth of flavor.

  • Yellow soybean miso

  • Red soybean miso made with rare Japanese beans

  • Chickpea miso or Red bean (azuki) miso

The tasting menu and miso varieties may vary depending on seasonal availability.

Enjoy the miso with pre-made miso soup and fresh vegetable sticks, allowing you to experience how each miso shines in different ways.

👨‍👩‍👧 Family-Friendly:

No knives or stovetop cooking are involved, making this a great hands-on experience for families with children (parent/guardian participation required).

🌱 Vegan-Friendly (upon request):
The miso-making portion is naturally vegan. A vegan tasting option with kombu & shiitake dashi is available with advance notice.

  • Minimum Enrollment: Classes require at least 6 participants. If a class doesn’t meet the minimum, it will be canceled 48 hours before the start time and a full refund will be issued.

  • I’m attending alone. Will I cook with a stranger?

    Not at all! This class is designed so that each participant makes their own batch of miso from start to finish. You'll have your own ingredients, your own mixing bowl, and you'll take home your own approximately 1.5 kg of handmade miso.

  • Do I need to bring anything?

    Just yourself and your enthusiasm! We provide all ingredients, aprons, and cooking equipment. However, you may wish to bring a notepad and pen to take notes on the fermentation tips we share during the session.

  • Is there an age requirement for this class?

    This class is family-friendly and suitable for children who can comfortably participate with the guidance of a parent or guardian.

    Unlike many cooking classes, there is no knife work or stovetop cooking involved. Each participant will mix, mash, and prepare their own batch of miso by hand, making it a fun and safe hands-on experience for both adults and children.

    Because the workshop is 90 minutes long and includes an educational portion, we recommend it for children who are able to follow instructions and remain engaged throughout the class.

  • Is this class hands-on or demonstration style?

    This is a fully hands-on class. Everyone will be actively cooking in small groups and practicing each technique step-by-step.

  • What if I have food allergies?

    Ingredients may vary. Please contact us before booking to confirm specific allergies so we can advise appropriately.

  • Will I receive recipes after the class?

    Yes. You’ll receive a recipe guide via email after the class so you can recreate the dishes at home with confidence.

  • Can this class be vegan?

    Yes! The miso you'll make in class is 100% plant-based, made with only soybeans, rice koji, salt, and water.

    During the tasting session, the pre-made miso soup is typically prepared with traditional Japanese kombu and katsuobushi (bonito) dashi. If you follow a vegan diet, we're happy to prepare a separate batch using kombu and shiitake mushroom broth instead.

    Please let us know when you register (or at least 72 hours before class) so we can prepare a vegan tasting for you.

  • What makes this class different?

    This isn't just a "make-and-take" workshop—it's a complete Japanese miso experience.

    In addition to making approximately 1.5 kg of your own additive-free miso, you'll learn why traditional miso is made the way it is, how to ferment it successfully at home, and how to avoid common mistakes.

    You'll also enjoy a guided tasting of three different handcrafted misos, served with pre-made miso soup and fresh vegetables, so you can experience how different beans and aging periods create unique flavors.

  • Is the workshop wheelchair accessible?

    Yes! The workshop facility is ADA accessible, and guests using wheelchairs are welcome to attend. If you have any specific accessibility needs or questions before booking, please feel free to contact us. We’re happy to help make your experience as comfortable and enjoyable as possible.
