Marvels of Miso
Event description
Join us for a workshop on the Marvels of Miso!
Kōji is a fungus (Aspergillus oryzae) traditionally used in Japanese cuisine to ferment foods like miso, soy sauce, and sake. This powerful fungus can transform simple ingredients into incredibly flavorful, umami-rich foods! During this workshop, you will learn the fundamentals of kōji and how it can be used in your kitchen.
Through fermentation, kōji's enzymes break down starches and proteins, increasing nutrient availability and creating deep, complex flavors. Kōji can be mixed with a variety of beans, grains, and even vegetable scraps to make delicious, shelf-stable ferments like miso. This makes it a fantastic tool for reducing food waste and building flavor from scratch.
In this workshop, we will:
* Learn some of the history and science behind Aspergillus oryzae.
* Demonstrate how to make miso at home.
* Taste a variety of kōji-based products including miso soup, quick kōji pickles, and amazake, a sweet fermented rice beverage.
This workshop is presented in partnership with ReDelicious DC and is supported by the Mycological Association of Washington DC.

In the event of severe weather, Common Good City Farm will send an email to all guests informing them that the event has been rescheduled to the rain date. Common Good City Farm has a pavilion where workshops take place so events can continue to happen in the rain.
Rain date for this workshop will be Thursday, September 11 from 6 - 8p
please be sure you can make the rain date when registering for this workshop in case of postponing.
