Begin your experience with Champagne and freshly shucked oysters in the hotel foyer, before ascending to the rooftop for a four-hour culinary journey. Sip G.H. Mumm Champagne, limited-edition cocktails, premium wines and select beers, perfectly paired with gourmet bites.

This year’s highlight is our Bay to Bar seafood station – an indulgent showcase of Tasmanian Pacific and Sydney Rock Oysters, premium caviar, Moreton Bay bugs, sashimi and Hervey Bay scallop ceviche, complemented by classic accompaniments. Just steps away, our vibrant Aperol Spritz Cart will be shaking up three refreshing spritz creations, bringing a burst of colour and the unmistakable taste of spring to the celebration.
