Join NCIFT for this talk focusing on recent developments in consumer demand for plant-based meats, environmental impact reports for these products, and opportunities for plant proteins to meet sensory parity with conventional meats. Building upon a fundamental knowledge of animal versus plant protein functionality and structure, research on enhancing plant proteins will be examined across the value chain: Crop development and breeding for protein content and functionality, wet and dry ingredient fractionation processes that enrich protein powders, and novel formulation and texturization methods will be discussed. Finally, potential future bottlenecks and emerging opportunities in the plant-based meat market will be evaluated.

Priera Panescu is a Senior Scientist at The Good Food Institute (GFI) where GFI is focused on accelerating the plant-based meat industry through analyzing the current landscape for plant-based protein and fats, identifying emerging technological solutions and bottlenecks, and communicating with other scientists about advancing alternative protein research.
