  • “Yakibitashi” grilled-soaked seasonal Vegetables (very traditional Japanese side dish)

  • Miso Soup using Kombu & Shiitake Dashi

  • How to balance flavor using homemade dashi

  • Simple Japanese meal composition

PREREQUISITE: Prepared Dashi Required

This class focuses on cooking with dashi and does not include instruction on how to make dashi from scratch.

To successfully follow along and complete the recipes, you must have prepared dashi ready before class begins. Participants who have not taken Dashi Basics Chapter 1 are welcome to join, but should be comfortable preparing their own dashi in advance.

You may use your preferred dashi, including homemade dashi or a quality dashi packet.

Please note that different types and brands of dashi vary in flavor, sodium content, strength, and quality, which may affect the final taste of the dishes. For the most authentic results, we highly recommend attending the Dashi Basics Chapter 1 workshop.
