WORKSHOP DESCRIPTIONS

Learn how to make authentic Japanese dashi from scratch and discover why dashi is considered the foundation of Japanese cooking.

In this beginner-friendly workshop, you’ll prepare several types of traditional dashi using kombu, katsuobushi, niboshi, and dried shiitake mushrooms while learning how each ingredient creates different layers of umami and aroma.

Together, we’ll make:

  • Kombu & Katsuobushi Dashi

  • Kombu & Niboshi Dashi

  • Kombu & Dried Shiitake Dashi

  • Homemade Miso Soup

  • Salt Koji Pickles with Kombu

  • Fresh Katsuobushi Furikake

Pre-Class Preparation (Important)

To help you get the most out of the class experience, please complete the following before joining:

  • Please measure out all ingredients in advance before the class begins.

  • Organize all cooking tools and equipment according to the provided tool list so everything is easy to access during class.

  • Wash and thoroughly dry all produce before class starts.

  • When possible, pre-portion or pre-measure ingredients for each recipe.

  • Organizing ingredients by recipe on rimmed baking sheets or small trays is highly recommended for efficiency.

  • Some additional preparation instructions may be shared a few days before class. Thank you in advance for your cooperation.

Access & Technical Information

  • One ticket per device. Families or groups watching together on the same device only need one ticket. Multiple viewers may join from separate devices require separate tickets.

  • The online event is held via Zoom. The access link will be delivered via email the day before the event. 

  • Participants are responsible for ensuring they have a stable internet connection and a device capable of accessing the online class platform.

  • You may join the class starting 5 minutes before the scheduled start time.

  • The class will begin on time, even if all participants have not yet joined.

  • If you join late, you may still enter the class; however, please note that you may miss important steps or demonstrations. For the best experience, punctuality is strongly recommended.

  • Since presentation slides will be shared during class, we strongly recommend joining from a computer or iPad rather than a mobile phone for better visibility.

FAQs

  • Is this class live or pre-recorded?

    Classes are taught live online. Some workshops may also include supplemental pre-recorded videos or downloadable materials.

  • Will I receive recipes and class materials?

    Yes. Recipes, ingredient lists, and class materials will be provided before class.

  • Do I need special equipment?

    Most classes use standard home kitchen tools. Any specialty equipment will be listed in advance.

  • Can I ask questions during class?

    To help the class flow smoothly and stay on schedule, I kindly ask that most questions be saved for the dedicated Q&A time during or at the end of class. Of course, if you’re stuck or need clarification to continue with the recipe or fermentation process, please feel free to ask at that time.

  • Where can I purchase Japanese ingredients or tools?

    Class materials include recommended ingredient and equipment resources, including online shopping links and Japanese grocery recommendations.

  • Are the classes hands-on or demonstration style?

    Most classes are hands-on and designed for you to cook or ferment alongside me in real time.

  • Can I take Chapter 2 without taking Chapter 1?

    Yes. However, taking Chapter 1 is strongly recommended unless you already have experience making Japanese Dashi (soup stock) .

  • Is homemade dashi difficult to make?

    Not at all. Homemade dashi is surprisingly simple and uses very few ingredients.

  • What’s the difference between homemade and instant dashi?

    Homemade dashi is made from natural ingredients without added salt and many of the additives or preservatives often found in instant soup bases.

  • Can I reuse the dashi ingredients afterward?

    Yes! Used kombu and katsuobushi (bonito flakes) can be reused for dishes like furikake and tsukudani, which we will be also making two items together in this class!
