Spotlight On: Pergamino
Event description
This month, MCM is delighted to welcome our long-time Colombian supply partners, Pedro and Léo from Pergamino, to Australia… and get excited, because we’re bringing them to you! We’ll be hitting the road in late November, with events scheduled in Melbourne, Sydney and Canberra – and you’re invited!
With Pergamino’s day-to-day operations including coffee farms, an export business sourcing via small holder producers, a dry mill, a roastery and several cafes in the busy city of Medellín, Pedro and Léo are bringing an enormous amount of knowledge, experience and insight into the Colombian coffee industry to our Australian coffee community.
During a fun and informative presentation, Pedro will share the history, model and operations of his family’s business, Pergamino, and take a deep dive into the economic structure of the Colombian coffee industry and the potential for greater opportunity and prosperity for its producing communities. Léo brings his expertise on fermentation science, and explains how different processing techniques affect the cup profile of a coffee, and how this can contribute to the future of specialty coffee.
