Melbourne’s hatted darling, Poodle Bar & Bistro, is heading to Sydney. For one gloriously decadent night, the Fitzroy icon will take over Parlour at QT Sydney, bringing retro glamour, European bravado and a killer mille feuille to the heart of the CBD.
This one-night-only pop-up follows the sell-out success of Lagotto x Gowings earlier this year. Known for championing bold flavours and brasserie indulgence, QT Sydney now welcomes another of Melbourne’s finest into the QT fold. Parlour, where neo-French meets bold, offers candlelit late-night dining and Parisian-inspired bites ranging from classic to avant-garde.
At the helm of Poodle is Executive Chef Emma Dawson, whose CV includes Melbourne icons Cumulus and Meatsmith before stepping into a sous chef role at Poodle. From churning out thousands of Rocco's famous meatball subs to steering the post-lockdown kitchen at Poodle, Emma’s journey is all about adaptability, passion, and a serious knack for creating food people want to devour. The menu reimagines European bistro classics with contemporary verve - think spanner crab & cod roe profiterole, pork neck skewers glazed with smoked orange, and hibachi-grilled hanger steak with café de Poodle butter. Their banana and ricotta mille feuille is the stuff of legend. And we can promise this dish will be on the menu. Stay tuned for the menu reveal!
With 15/20 in the 2025 Good Food Guide, Poodle is celebrated for being “ostentatious and wicked in all the right ways”. This will be indulgent, loud, a little bit theatrical - and absolutely unforgettable.
