Salu Mesa @ Namit Cafe: Synesthesia
Description
A six-course Filipino-inspired tasting dinner set to a tracklist
Salu Mesa @ Namit Cafe
Join Salu Mesa at Namit Cafe for an intimate evening of Filipino-inspired food and music, where each course is paired with a song.
For SYNESTHESIA, chef Shaun Tupaz brings Salu Mesa’s contemporary approach to Filipino flavors to Namit Cafe. Familiar ingredients take unexpected forms, while a thoughtfully selected tracklist accompanies the meal connecting what’s on the plate with the mood of each song.
You'll recognize the flavors, though not always the form they come in.
The menu
1. Opening bite: a crisp wonton tartlet
2. Scallop kinilaw: calamansi, vinegar, ginger, fermented chili
3. Chicken inasal agnolotti: annatto chicken fat, calamansi, charred allium
4. Seared short rib: mole, smoked corn, charred Chinese broccoli
5. Burnt pear: cane-vinegar compression, miso, toasted rice
6. Leche flan: dark caramel
Taking inspiration from the two sides of a record, Side A and Side B frame an evening of shifting flavors, textures, and atmosphere. Come ready to try something new, find a song you’ll play again, and linger over a meal made for the occasion.
Bring a date, come with friends, or join us on your own. No tasting-menu experience or music knowledge required. Just an appetite and a little curiosity.
