"Perth Sake Lovers,

It's been 6 years since Master Hiroshi Inoue of Inoue Seikichi Co. Ltd., Tochigi Prefecture, first graced Perth with the exquisite taste of Sawahime Sake. Now, after years of anticipation, we are honoured to welcome him back for a truly special Toji Dinner Event on Friday, April 4th at 6:30 PM. Join us at Hiss & Smoke, Yagan Square, as we celebrate the enduring passion for Sawahime in Perth. 

This marks Master Inoue's long-awaited return, and we've prepared an evening that echoes the warmth and appreciation Perth has always shown for his craft. Master Inoue’s concept is to brew sake that shines the natural raw ingredients of his hometown, Tochigi, and delivers a first sip that stops you in your tracks. He believes, “Sake of Tochigi is true with an everlasting sip.”

We are pleased to welcome Master Hiroshi Inoue, the man and the Toji behind the creations and brewing of Sawahime Sake from Inoue Seikichi Co. Ltd. His path to becoming a “Toji”—a master brewer—was paved with both tradition and innovation.

Through Sawahime, he offers a sake that embodies the essence of Tochigi. In every bottle, one can taste the rich heritage, innovative spirit, and heartfelt passion that define Master Inoue’s remarkable journey. 

Sandra Gwee – Kodawari Sake Education 

Perth’s first Certified Sake educator & Sommelier, accredited by SSA, UK. She partners with sake breweries and masters from Japan and other parts of the world, aiming to grow a more substantial connection within the Australian market. After a decade of hosting sake events and collaborating with sake companies, Sandra’s passion for sake drives her to educate guests on how to savor, enjoy, and understand all about sake.

His commitment to quality has led Sawahime to achieve significant international recognition, including the prestigious "Champion Sake" award at IWC2022 for Sawahime Ginjo, along with numerous other awards at the International Wine Challenge and the National New Sake Awards. Master Inoue's brewing philosophy, "Shin Jizake Sengen," emphasizes the importance of using local produce and representing the terroir of Tochigi, blending centuries-old traditions with modern innovation."
