What to Expect Each participant will mix their own sourdough bread dough by hand in a bowl while Audrey guides you through every step of the process. Together, we’ll explore: • What sourdough is and how natural fermentation works • How to feed, maintain, and use a sourdough starter • How to mix, stretch and fold (or coil fold), and develop gluten properly, shape your dough • How to understand fermentation and cold proofing • What to look for before baking and how to bake your loaf to perfection You’ll also bake a sourdough loaf prepared in advance, so you can see exactly how the dough should look and feel when it’s ready to bake — and taste the finished result! At the end, you will have a dough to bring home and bake the next day.
