Description

Join us for an immersive, hands-on experience in sustainable cooking at our zero-waste kitchen, nestled in the heart of the iconic Queen Victoria Market at the Purpose Precinct - powered by social enterprise STREAT.

Celebrate the flavours of summer while learning the timeless art of jam making. In this hands-on workshop, you'll transform rescued seasonal fruits into vibrant, delicious preserves perfect for gifting, sharing or enjoying at home. Guided step-by-step through the jam-making process, you'll learn how to balance sweetness, acidity and texture while working with an ever-changing selection of rescued fruit that may include berries, plums, peaches, nectarines, apricots, figs or pears. Along the way, you'll discover practical tips for reducing food waste, preserving seasonal abundance and creating beautiful homemade gifts that capture the taste of summer in a jar. Best of all, you'll leave with your own handcrafted jar of summer jam and the confidence to make it again at home.

Leading you is Fiona Smith: Fi is a food system and low-waste cooking champion, Renew magazine columnist, and Better Circles podcast host, who will inspire you with practical skills that turn food that's on the way out into long-lasting, delicious creations.
