Tasting Australia: A Degustation Experience with Feels Botanical

Indulge in an evening of exceptional Australian flavours at Tasting Australia, a curated four-course degustation dinner paired with four handcrafted cocktails, in collaboration with Feels Botanical.

Set in our garden (weather permitting), this immersive dining experience will showcase the finest local ingredients, thoughtfully paired with Feels Botanical’s unique botanical spirits. Led by Blake, Joshua, and Zak, each course will be introduced alongside its paired cocktail, highlighting the harmony between food and spirits.

Guests will also have the opportunity to taste Feels Botanical’s range straight and engage in a Q&A session to dive deeper into the craft behind each pairing.

MENU HIGHLIGHTS:
On Arrival: Rock oyster with finger lime mignonette & Hemp Mojito

Course 1: Kangaroo tartare w/ cured egg yolk on croute + Rose Negroni

Course 2: Scallop or prawn with native compound butter + Lychee Paloma

Course 3: Confit duck leg, warrigal greens, red wine jus + Ginseng Daiquiri

Course 4: Lemon myrtle curd meringue + Cardamom Sour
