    Bill Lark’s career as Australia’s most recognised whisky distiller began with a single question: “I wonder why there isn’t anyone making malt whisky in Tasmania?”. This question saw the revival of an industry in Tasmania, the development a globally-recognised and celebrated whisky distillery with LARK, and Bill Lark becoming one of the most prominent figures in whisky – renowned the world over as the godfather of Australian whisky. Together with his with wife Lyn, they built an enduring passion and dedication to craft and generosity of spirit in supporting others hone their skills.

    The Keep is the stunning backdrop for this exclusive Lark Whisky Dinner. You are not just attending a whisky tasting - you're embarking on a sensory journey through some of Tasmania's finest food and spirits, alongside Bill Lark himself.

    Our gifted chef Sam Jackson of Poco Tasmania has composed a sensational dinner matched to the whiskies.

    Given the exclusivity of this event, we encourage you to book promptly to secure one of only a few seats available.

    The ticket price includes a welcome drink, dinner and matched whisky tasting.

    Please note accommodation at The Keep is not included but we can offer a room at the nearby French House for an additional cost.  Transfers to and from The Keep will also be available.
