Join Adam Moore for an insightful journey into the evolution of Australian chocolate. This Masterclass will cover the rich history of the Australian chocolate industry, exploring its diverse products and the lasting impact on the nation's chocolate culture. Young chefs will gain insights into the unique properties of chocolate and its application in the culinary arts.

The day begins with a guided tour of Lydham Hall, a historic house established in the 1880s. As the home transforms into a museum and café, participants will step into the past, visiting the 1880s kitchen and learning how chocolate made its way into Australian kitchens. An informative lecture on the history of Australian chocolate will follow the tour.

 Adam Moore is a highly respected corporate chef, public speaker, TV presenter, and award-winning innovator with a career spanning over three decades. Known for his leadership in the culinary world, Adam has worked with renowned companies such as ACCOR Hotels, Mars Australia, and Kraft Heinz, and has contributed to the development of over $300 million worth of new products.

As the newly elected Young Chef Mentor for NSW, ACT & Regions, Adam is passionate about guiding and inspiring the next generation of chefs. He is also a Certified Executive Chef (CEC) and a member of the Australian Institute of Food Scientists.

Beyond his culinary expertise, Adam is dedicated to humanitarian causes, having raised over $7 million for various charities and serving as a National Ambassador for Cure Cancer and RUOK?.
