Eagle Bluff’s annual fundraiser event, Banquet on the Bluff, will be held on Saturday, October 10, 2026 on our scenic campus, nestled along the Root River in southeastern Minnesota near Lanesboro. This years theme is “Boot & Bowties,” celebrating 29 years of coming together to support Eagle Bluff’s transformative outdoor experiences. The evening promises:

Appetizer Course: deviled eggs w/ roasted peppers and crispy prosciutto, queso dip and tortilla chips, mini cornbread muffins w/ honey butter, garlic & cheddar biscuits w/ apple spread
Salad Course: mixed green salad, pears, manchego cheese, currants, maple dijon vinaigrette.
Main Course: bone in-smoked pork chop, pecorino mashed potatoes, roasted vegetables, apple chutney. Non-Meat alternative: Smoked Tofu
Dessert Course: caramel apple cake: spiced cake, apple filling, bourbon caramel, ice cream. GF/Vegan alternative: apple crisp
