We’re separating a protein called Rubisco which is the most abundant protein on the planet (and responsible for photosynthesis) – it’s an incredible food ingredient, so we’re using leaf protein to develop a range of foods that lift people out of the cycle of dissatisfaction with the existing plant- and animal-based proteins.
