MICHAEL PALMER - Cheese connoisseur

Michael's impression of cheese and food making goes back to his grandmother and mother, although on his wanders as a child/teenager in Goulburn and Deniliquin he saw milk being processed, cheese being made, milked cows and the attempt to make wine from table grapes growing in his backyard.

Not without its distractions the base had been set for a career as a Food Technologist. A career in which he was more interested in the food than the science.

Over the years Michale has made cheese and been involved with other aspects of the dairy industry, experienced the worlds of petfood, the flavour industry, fruit and fruit juices, cereals, the regulatory side of the food industry and confectionery.

The realisation of his underlying passion for food and wine came in a trip to Italy and the Terra Madre Salone del Gusto. An event devoted to artisanal producers and the world's largest event dedicated to sustainable food and food politics.

Throughout the time spent in the country Michael had the opportunity to see first hand the making of Parmigiano Reggiano and to try some of the cheeses native to the different regions and provinces passed through.

Today, there is nothing more congenial to him than sitting down with friends around a cheese platter and a glass of your favourite wine in anticipation of a simple flavoursome meal prepared and cooked with love.
