July is the perfect time for some outdoor cooking over the fire with

Chef Spencer Bressette and Fire On The Mountain Co!

We typically think of the the 4th of July as the start of grilling season. What if we take that one step further cook outdoors on open flame?!

Join us on the farm for an adventure in food from the open flame!

Enjoy a sunday evening with a delicious multi-course seasonal focused meal outdoors amongst the trees, birds and beauty of a farm!

Join us at Crown Hill Farm on a journey that will delight your senses from the flavor of a perfect char to the scent of smoke from an open flame surrounded by hayfields, forests, vineyards and gardens all with a view of Lake Erie in the distance!

Be greeted to Crown Hill Farm by Missy Singer DuMars with a tour of her farm. Learn about heirloom and heritage foods grown there and see for yourself what is fresh and in season at this time of the year. Discover how the market gardens are tended with no-till/low-till practices to preserve soil and support delicious, nutrient-rich foods.

Enjoy a beautiful evening of dining outdoors in the orchard with food fresh from the gardens nearby.

Sit down to a meal prepared by Chef Spencer Bressette of Fire On The Mountain Co, who brings us a menu joining together the seasonal bounty of WNY paired his open fire, off-the-land cooking!

Chef Spencer brings food back to the land in his unique style of cooking over an open fire in the outdoors. Besides cooking outdoors, he loves to forage through nature, finding edible roots, plants, and fungi, to incorporate into his dishes. He also leads folks on educational foraging adventures so this is sure to be a unique and informative dining experience!

Spencer’s dinner will feature Crown Hill Farm vegetables, eggs and edible delights along with meats, dairy and treats from nearby farm friends. Take in the beauty of the early evening light as Chef Spencer shares about the delicious, seasonal menu he prepared for you in addition to the regional wine pairings chosen for the evening’s meal.

Bring along your friends or family to sit together and dine on this multi-course Farm-to-Table meal and enjoy the optional add-on wine pairings hosted by Kim from Six Friends Cabernet.

About Chef Spencer Bressette:  

Since he was a kid, Chef Spencer was cooking and learning how to make fresh bread and spaghetti sauce from his grandma. After having worked for 10 years professionally in a range of different restaurants around the city of Buffalo and surrounding areas, he’s turned to his own business: The Fire On The Mountain Co. as Head Chef. With such a wide range of experience, Spencer enjoys exploring the roots of where food comes from— not only different cultures but also the history of food. Everything from nouvelle cuisine and rustic Italian food to West African BBQ and cooking on rocks over fires. On a dish from Chef Spencer, you can find anything from elegant to hearty. He believes that the ability to learn, change, grow, and push the boundaries of food is what defines who we are as great chefs. When we stop believing we need to really do those things is the day we stop being great chefs. As William Shakespeare wrote "The fire that's kept closest, burns most of all." Well in our hearts is the fire that should burn the hottest and brightest.

Spencer is also an avid gardener and outdoorsman with the belief that the best food in life can be found right outside our own door. He loves to cook over a wood fire — ‘primitive style’. The magic of harnessing the power of fire to make a delicious meal is what fuels his passion. Along side is his beautiful wife, Katie Bressette, who is their in-house photographer, designer, decorator and event coordinator/manager. She is a Buffalo State Graduate, majoring in arts and photography. Chef Spencer says: “She can do everything I cannot do. She is the ying to my yang.”
