👨‍🍳 About Terra Firma & Chef Charly Pretet

French born, multi award winning Chef Charly Pretet has reimagined outdoor dining with his signature Terra Firma style: a marriage of Argentinian Style Barbecue with refined French technique and flavours.

From dawn until dusk, he tends to the fire, slowly coaxing out flavours, ensuring every cut of meat is infused with smoke, perfectly caramelised, and melt in your mouth succulent. It’s primal cooking elevated: bold, rustic, and deeply flavourful, executed with the precision and artistry of fine dining.

Whole legs of lamb hung over open flames
Smoked whole chicken, skin crisped by fire, flesh succulent and aromatic with herbs
Wild-caught barramundi, gently smoked on cherry wood planks, with delicate notes of fruit and flame
Smoked cabbage with grilled greens, fresh garden leaves, citrus slaw & dukkah
Coal roasted pumpkin, caramelised in its skin, drizzled with burnt honey and balsamic reduction, topped with creamy crumbled feta
Golden Crispy Smashed Potatoes served with Meat Drippings

Dessert Finale

6 hour smoked pineapple, Grilled peaches with Cinnamon crumble, Dulce de leche, topped with Silky Bladnoch whisky honey whipped cream
