Learn to make the cuisine from the Greek island of Ikaria in our next 4-week Food as Medicine series. Known for its physical and geographical beauty, and for being a Blue-Zones designate, Ikaria is home to a population (8,400) of people who live longer than almost any others in the world with far lower incidences of cancer, cardiovascular disease, and dementia. Why? There are many factors: Ikarians live at a slower pace than most of us, they build strong social ties, and live with purpose. As for their diet, they grow most of their own foods, largely plants, and eat almost nothing processed. They even make their own (very strong) wine and olive oil!

In this series of 4 hands-on cooking classes, students will learn how to make traditional Ikarian dishes. Examples are Vegetable Soufico, Ikarian Fish Soup, Spanakorizo or Spinach Rice, Stuffed Eggplants, and Ikarian-Greek Salad, Hummus, and Pita Bread.
