Pan Koutlakis went from kitchen hand to CEO of foodora Australia for Rocket Internet, one of the world's fastest-scaling startup machines, to co-founding EatClub in 2017. He made an ambitious bet - that dynamic pricing, the same model airlines and hotels have used for decades, could completely change how restaurants fill tables.

He recruited Marco Pierre White, built a two-sided marketplace from scratch, and was growing fast.

Then COVID hit and overnight, every restaurant in the country was closed.

Pan kept building. EatClub came out the other side seven times bigger than it went in - $27 million raised and a valuation north of $200 million.
