This comprehensive 6-hour workshop will guide participants through the core principles of allergen identification and management, and labelling compliance. You’ll gain a clear understanding of PEAL (Plain English Allergen Labelling) requirements, how to identify and manage cross-contamination risks, and when to apply precautionary allergen statements. Whether you're involved in food production, new product development or QA, this session equips you to meet regulatory obligations and protect consumers with confidence.

This workshop will be delivered by Nicole Koek, Allergen Bureau VITAL Coordinator. A qualified trainer with more than 25 years of global experience across food safety, quality, regulatory affairs and data governance, Nicole has worked in both factory and corporate environments with leading local and international food brands. She is a long-standing supporter of the Allergen Bureau and is passionate about allergen awareness, practical compliance and transparent labelling. Nicole combines deep technical expertise with hands-on industry experience, helping businesses apply the VITAL Program with confidence and turn complex requirements into clear, workable solutions.
