The world is attracted to Mezcal because so much of it is made by hand using pre-industrial methods. And the flavors and aromas tend to reflect the biodiversity of the communities where the spirits are made. And … so many more things. One of those things, though, is the source material used to make the spirits: the agave. There are more than 158 recognized species of agave in Mexico. And that’s just species — each of those species has numerous varietals. And each of those varieties creates different flavors. Join SACRED founder Lou Bank for a tasting of five agave spirits made by the same mezcalero, using the same methods and the same tools, to better understand what different agaves bring to different bottles.
