Cheese is delicious, nutritious and making your own is a very satisfying and money saving skill. Chef Tim will get you started with this addictive hobby as you learn to make some simple cheeses you can easily make at home.
Tim will cover:
- Overview of cheesemaking basics
- Ingredients and equipment needed
- Hands-on demonstrations of three cheeses - mascarpone, ricotta, and chèvre (fresh goats cheese)
- Recipes and demonstrations of a few recipes using these cheeses
There will be plenty of tastings as well as tips and advice on where to get the best ingredients, cheesemaking supplies and equipment + recipes to take home.
Meet Tim
Tim Greaves has 24 years of experience as a chef in Australia and the U.K., focused on European and Modern Australian Fine Dining. These days he focuses on sharing his skills as a teacher and running his hot sauce business 'Foraged Fire.' Tim is passionate about sustainability, minimising waste and sourcing and eating locally and an obsessive forager, fermenter and home gardener.
