Introduction to Food Preservation - Fermentation

Join us for a leisurely afternoon learning the basics of home based food preservation, followed by a shared meal of all our favorite fermented foods!
This is the first workshop in a series that will focus on home based food preservation methods. The main focus of this workshop will be lacto-fermantation of fruits and vegetables.
It is widely accepted that humans have been preserving food since 12,000BC and although in modern times we don't necessarily need to for survival reasons, we have seen a huge surge of interest in these traditional skills for a range of reasons.
Preserving our own food at home allows us:
A stock of healthy often homegrown foods, have control over what is in our food, healthier food options, increased food security, opportunity to save money, preservation of traditional skills, minimization of food waste, a fun day often shared with friends!
During our workshop you will:
1. Be introduced to the basic methods of preservation for home use
2. Actually create three different fermentations to take home and watch the fermentation process in real time.
3. Sample fermentations at different stages to gain an understanding of the process.
3. Enjoy a shared catered lunch with a range of fermented foods and beverages.
Please bring along if possible:
An Apron, recommended
3 wide mouth jars to take home your creations. 500mls approx.
You will receive:
Three fermentations (made by you) to take home in your supplied jars
PLUS.......
A sourdough starter
A SCOBY to get your own kombucha started
Your own set of recipes and notes from the day and digital recipe access
Notes:
All ingredients and equipment will be provided for you on the day.
We will then sit down to a shared meal of all our favorite fermented foods. The meal will be mostly gluten free and vegetarian.
This venue is a private residence that contains stairs, uneven and loose surfaces. Please contact us directly if you have any accessibility or dietary questions, every effort will be made to accommodate our guests of all abilities.
