Simone Rossi, originally from Grosseto, Italy, is a distinguished figure in Hong Kong's bar scene. He formerly held the position of Director of Bars at Rosewood Hong Kong, where he led Darkside to numerous accolades. Demonstrating his innovative spirit, Simone embarked on an independent venture to create Ratafia Rossi, a modern Italian aperitif wine.

Some of the best bars from around the globe will be descending on Sydney this April for the third annual Maybe Cocktail Festival. Bar talent from the most internationally acclaimed bars in the world including more than 12 of The World’s 50 Best Bars will take up residency at venues across Sydney including Maybe Sammy, Dean & Nancy on 22, El Primo Sanchez, Maybe Frank, Little Cooler, P48 and Hacienda. With most events free to attend, it’s a unique opportunity to experience some of the best bars in the world without the cost of a plane ticket.
