Simone Rossi, originally from Grosseto, Italy, is a distinguished figure in Hong Kong's bar scene. He formerly held the position of Director of Bars at Rosewood Hong Kong, where he led Darkside to numerous accolades. Demonstrating his innovative spirit, Simone embarked on an independent venture to create Ratafia Rossi, a modern Italian aperitif wine.
