MOSAIC Cooking Class: Nepal | Tamang Society of South Australia
Description
Lhasso fyafulla! 🙏🇳🇵
In collaboration with the Tamang Society of South Australia and supported by the City of Unley, join us as we learn how to make 'Khapse' - traditional Sonam Lhocchar (Tamang New Year) Pastries with 'Golveda ko Achar' - a spicy Nepali tomato pickle! The event will also feature a 'damphu' demonstration - a traditional Tamang hand drum which serves as a core symbol of Tamang cultural identity and heritage. The Tamang People of Nepal are of Tibeto-Burman descent, with traditions pointing to migrations from Tibet (and historical connections to Tibetan and Mongol elements). The word Tamang is often translated as "horse trader".
MOSAIC Cooking Classes bring people together to create spaces that foster close-knit friendships, strengthen community wellbeing, and nurture intercultural understanding.
These events foster connections between international students, newly settled migrants and established residents, who live and breathe the challenges of adapting to life in Australia.
MOSAIC uses culture, connection and participation as mechanisms for social connection, preventive wellbeing, access to support, and improving intercultural understanding.

THE CHEF:
Rashmi Tamang is the General Secretary of the Tamang Society of South Australia (TSA), a community organisation working for the welfare of Tamang migrants, visitors, students and to promote culture, arts, music and Tamang heritage. Rashmi will be joined by members of the TSA Committee for the event to teach us about the Tamang community in South Australia, language, traditions, culture and stories.
THE DISH:
Eating khapse on Losar is thought to bring warmth, peace and tranquillity in the new year, and preparing it is both an art and a labour-intensive process.
The dough is kneaded, rolled and shaped into designs like flowers, knots and braids before being and fried in ghee (clarified butter).
According to Geshema Delek Dolma, a nun at Dolma Ling Nunnery in northern India's Himachal Pradesh state, the history of khapse is intertwined with early Bon rituals – the indigenous religion practised across the Tibetan plateau before the arrival of Buddhism in the 7th Century CE – where blood offerings were made to deities.
"[Instead] of animal sacrifice, the custom evolved into offering khapse, which was sometimes coloured red as a symbolic gesture," Dolma said. "The practice eventually spread to the other two provinces [Amdo and Kham] of Tibet."
Khapse-making is a communal activity. It requires many hands to prepare the honey-golden pastries in large quantities so it can be distributed to friends, family and across the community. So in the days ahead of Losar, family members come together to prepare large batches of khapse.
