WHO YOU WORK WITH
Nathan Phayu Brown is more than a chef, he also champions the power food has with connecting people and land.

Recently, Nathan immersed himself in the traditions of the Akha, Lawa, Tai Lue, and Shan communities in northern Thailand to gain more knowledge with their ancient cooking techniques. He has brought these learnings with him to Australia, and we are thrilled that he'll be sharing these skills at the Taste of Thai workshop.

Nathan has been a senior sous chef in multiple London restaurants, but now he is focused on his travelling pop-up supper club, Laam Thai, which he co-founded.

Each workshop participant will work mainly with Farm My School produce. We do not know the recipe until the week before the workshop. Most of them are veg-focused, but occasionally there is a protein included.

WHAT YOU MAY LEARN
Attendees will be treated and spoiled with recipes inspired by northern Thai tribes. These flavours are from the heart of the mountains, and each dish carries its own story with a tribute to their heritage, unique tastes and deep connection to its country.

This workshop is suitable for conscious creatives, beginners in the kitchen, expert foodies or anyone interested in learning more about Thai flavours.

WHAT YOU NEED
Please bring your own containers or jars to the workshop, and wear comfortable shoes for standing for the duration of the workshop. It's also recommended that you pack your own water bottle. It will be spicy!

Farm My School is a not-for-profit organisation that collaborates with schools to promote healthy eating, ecological stewardship and connected communities. Farm My School transforms underutilised school lands into regenerative market gardens to nourish, educate and connect its local communities.

The Farm My School Nourish workshop series has been designed to help families unlock affordable ways to grow and cook simple, nourishing food. Run by renowned chefs, food makers and our own Farm My School team, the workshops are designed to encourage simple and practical ways to think about food growing, health and wellbeing.

WHAT ELSE DO WE DO
We work with organically-grown, nutrient-dense and seasonal produce from Farm My School, which are available to purchase via our weekly or subscription veggie boxes .

We also offer education sessions, incubator traineeships and corporate experiences. This is more than a farm – this is a food hub built for community, connection, education and sustainability!
