    Event description

    Indulge in a vegan culinary experience at this Climate Week brunch in the unique location of a hidden warehouse in North Curl Curl with scenic views. Join us for a celebration of plant-based flavours by Val the Vegan ChefĀ andĀ hear from speakers that will share the latest on sustainable eating.

    Val is an Italian vegan chef who previously owned vegan restaurant The Dandylion in Bondi and currently providing high-quality vegan cuisine to private customers. Combining her passion for cooking and art, Val creatively shows the infinite flavourome possibilities of vegan cuisine.

    She will be joined by Jaynika Patel, a sustainability consultant that will give an overview of how food choices affect the planet and Alicia Dudek of MycoReality, a fungi fanatic that will share fascinating innovations where mycelium is being used to create whole new sources of food and alternative proteins. FableĀ is generously providing "meat" made out of shiitake mushrooms which Val will cook as part of the menu.

    Brunch will be served family-style with an assortment of vegan delights alongside danishes, coffee, juices, and tea. Menu includes:

    • Buckwheat pancakes with berries compote and coconut or soy yoghurt (gluten free)
    • Breakfast burrito (scrambled tofu, cajun beans, spinach, sheers, coriander pesto, sweet chilli)
    • Benedict with English muffins, spinach, ā€œbaconā€ made from soy, portobello mushroom, avocado, and hollandaise sauce
    • Scrambled tofu, miso mushroom, kale, walnuts, truffle oil on corn fritters (gluten free)
    • Caesar salad with cos lettuce, croutons, ā€œbaconā€ made from soy, parmesan
    • Dishes with Fable's shredded "meat" made from shiitake mushrooms
    • Mango cheesecake shots (gluten free)
    • Oreo cheesecake shots (gluten free)

    Food will be available when doors open at 11AM with talks starting at 12PM. Guests are welcome to stay until event close time 2PM.
