She will be joined by Jaynika Patel, a sustainability consultant that will give an overview of how food choices affect the planet and Alicia Dudek of MycoReality, a fungi fanatic that will share fascinating innovations where mycelium is being used to create whole new sources of food and alternative proteins. Fable is generously providing "meat" made out of shiitake mushrooms which Val will cook as part of the menu.
