About our guests...

Charles Casben, Moya's Juniper Lounge
Charles started bartending at the turn of the century while studying physics at Sydney University. After several years of competition, academia lost and hospitality was victorious. Having worked at various cocktail bars around Sydney he went on to study wine and passed the Certified CMS exams in 2011 while working at Christine Manfield's Universal Restaurant in Darlinghurst. Wanting to get back behind a cocktail shaker, Charles opened Moya's Juniper Lounge in 2016, an old-world cocktail bar focussing on gin classics where he resides to this day.

Evan Brown, The Fresh Collective - Pier One
A professional bartender with years of cocktail competition experience, Evan has developed a format for cocktail programmes that are simple to teach and aim to achieve consistency, speed, and showmanship. The Fresh Collective offer exceptional food and beverage experiences at each some of Sydney's most iconic venues including the Art Gallery of NSW, Museum of Contemporary Arts, Sydney Theatre Company, University of Sydney, Lindesay House (National Trust), Parliament House of NSW, just to name a few.
