The Hilton Dinner series returns to present Taste of South Australia: Bremerton Wine Dinner Extravaganza, a well-curated collection of the finest South Australian wines from the Bremerton vineyard, paired with an equally sumptuous 5 course menu. Join us for a one-of-a-kind culinary experience crafted to perfection with a perfect blend of quality wine and gourmet food, only at Hilton Darwin.

On Arrival

Bremerton Dulcie Sparkling Chardonnay

Bread/Butter on the table

1st Course

Marinated trevally, fish butter emulsion, liquidised olives, carrot espuma 

Paired with: Betty & Lu – Sav Blanc

2nd Course

Flamed prawn carpaccio, spiced papaya mousse, miso mayo, corn puree

Paired with: Special Release Tempranillo/Graciano   

3rd Course

Snapper, potato and mozzarella parmentier, salmon caviar, fried capers:

Paired with: Batonnage Chardonnay

4th Course

Beef, potato mille-feuille, kimchychurri sauce

Paired with: the Old Adam Shiraz

5th Course

Cappuccino: steamed choc brownie, macadamia praline, coffee sponge, milk mousse

Paired with: Mistelle fortified Chardonnay (dessert wine)
