Event description

Join five distinguished distillers for a once in a lifetime experience with Tasmanian chef Analiese Gregory, author of How Wild Things Are: Cooking, Fishing and Hunting at the Bottom of the World.

Analiese will be cooking four courses over fire, matched with single malt whisky, with in season and local produce. This amazing experience is an intimate dinner with our distillers and Analiese, limited to10 guests only.

Our distillers taking you through their whisky and telling their story are: Jane Overeem of Overeem Whisky, Suzy Brett from Spring Bay, Chris Thomson, head distiller of Lark and David Kernke from Shene.

The distillers will be dining with you, pouring their whisky to the matched course and regaling you with plenty of stories.

This event will take place at the heritage listed Shene Distillery, located in Pontville.  Shene Estate was established in 1819. The heritage-listed property has direct links with King George III and Governor Lachlan Macquarie and has been conserved for future generations.

Dinner will be held in the cellar door, a convict-built building dating back to 1846.

The cellar door was originally a granary and then a shearing shed. When David and Anne Kernke purchased the property, in 2008 they reinstated the original walls and flooring and put in a replica of the original doors, which allowed wagons to pass through the building.

Guests will be transported to and from Hobart CBD with Drink Tasmania at 4pm. Pickup and drop off at Brooke Street Pier, Hobart. Upon arrival guests will receive a private tour of Shene distillery.

Following that, you will receive a glass of Lake Barrington Estate 2019 Wild Sparkling as you warm yourself by the fire in the courtyard. Wines provided are Lake Barrington 2019 Chardonnay ‘Ceilidh’ and Petrichor 2019 Single Vineyard Pinot Noir.

Analiese Gregory is one of the most talked about and trailblazing young chefs in Australia today, with a string of enviable kitchen credits to her name, including The Ledbury, Michel Bras, Mugaritz and Sydney’s Quay. Having flirted with returning to France, she instead packed her bags on a whim in 2017 and moved to Tasmania where she headed up the state's most acclaimed restaurant, Franklin in Hobart. When Analiese is not busy with one of her many projects, she is renovating her 110-year-old farmhouse in the Huon Valley, where she lives with a cornucopia of farm friends and a wardrobe filled with charcuterie (a new hobby; she insists it was the best place for it!) and plans to open a bespoke intimate restaurant. Tasmania has given her a semblance of meaning and the life she craved, and she cherishes her time in nature foraging, diving, hunting, cooking on beaches, and connecting with the people whose life work it is to grow our food.

In 2020, she appeared with chef Gordon Ramsay in his National Geographic series Uncharted (screening on Disney Plus) In the episode, Analiese is Gordon’s culinary guide to Tasmania, introducing the island’s unique ingredients and food traditions. She is also working on her own TV series ‘A Girl’s Guide to Hunting, Fishing and Wild Cooking’ with Southern Pictures and SBS to air in 2021 that follows her cooking and outdoor adventures in Tasmania. Analiese was born in Auckland, New Zealand, to a Welsh father and Chinese-Dutch mother. Raised on a mix of stroopwafels and pork buns, she was schooled long-distance for three years during a caravan trip around Australia.
